Rachel bakes 850 cupcakes for Whangaparāoa Primary School’s 121st birthday bash
It was sweet treats all-round for Whangaparāoa Primary School as they celebrated their 121st birthday. To make the day extra special for her customers, North Harbour Business Development Manager, Rachel Kumar, baked a red velvet cake for the school’s staff and a whopping 850 chocolate cupcakes for the students.
“As our son attends this school, I thought of doing something special on this special day,” says Rachel.
With only two days to complete her mission, Rachel embarked on a cupcake marathon. It was all-hands-on-deck for the Kumar family as they banded together to ensure Rachel could bake such a large quantity in a short timeframe.
“My whole family was hands-on for this project. Neil was on-call getting ingredients whenever I needed (even late nights) and my kids were making cupcake boxes, splashing sprinkles and doing the worst job – dishes.”
Fortunately, Rachel’s love of baking and gifting meant she took this challenge in her stride.
“Baking is one of my favourite hobbies to do in my spare time and very relaxing activity to do. I love baking for the creativity that can go into the process to make something not only tasty but a feast for the eyes,” says Rachel.
Whangaparāoa Primary School Principal, Kevin Cronin, went out of his way to show appreciation for Rachel’s ‘marathon’ baking efforts.
“On behalf of Whangaparāoa School I wanted to express our gratitude for your generosity in providing the scrumptious cupcakes for our 121st birthday. This must have been a massive challenge and nightmare making over 850 cupcakes!! Thank you for your generosity in supplying them and making the day full of treats for our children.”
Year one teacher, Hannah Cronin, let Rachel know how much the kids loved their unexpected treats.
“The year one Tamariki in the Tindall’s classes were beyond excited and said they were DELICIOUS! You got the double thumbs up from them all.”
Despite being up to her elbows in cake mix for two days straight, Rachel would happily do this again.
“Keeping my customers happy by giving them homemade goodies is a delightful feeling. I would love to do something like this again.”
